Walk into any bike shop and you will find three shelves doing broadly the same job. Bars, chews and gels all exist to get carbohydrate into your bloodstream while you are turning the pedals, and all three will work if you use them properly. The problem is that most riders pick one format because a mate uses it, then blame the product when their stomach turns inside out at mile 70 of a hilly sportive.

The honest answer is that format matters more than brand. A gel and a packet of chews containing identical sugars behave very differently in your gut depending on how fast you eat them, how much water you drink alongside them and how hard you are riding at the time. This is a practical breakdown of cycling energy bars, chews and gels compared on the things that actually decide a ride: absorption rate, gut comfort, handling on the bike and what happens when the temperature drops.

Start With the Number, Not the Product

Before you argue about formats, settle on a target. For rides between one and two and a half hours, 30-60g of carbohydrate per hour covers most riders. Push past three hours and 60-90g per hour is where the performance data sits. The very top end — 100-120g per hour — is achievable, but only with a gut you have deliberately trained and a product using a glucose-to-fructose blend.

The reason for that blend is transporter saturation. Glucose crosses the intestinal wall via SGLT1, which maxes out at roughly 60g per hour no matter how much more you swallow. Fructose uses a completely separate route, GLUT5, adding another 30-60g per hour on top. Anything you take beyond your absorption ceiling simply sits in the gut, draws water in and becomes the bloating and nausea that riders describe as "my stomach shut down". It did not shut down. It got overloaded.

Work out your hourly number first. Then choose the format that lets you hit it repeatedly and without thinking, because on hour five of a gran fondo your decision-making is worse than you would like to believe.

Energy Bars: Substance, Slowly

A typical cycling bar carries 25-45g of carbohydrate, but it rarely arrives alone. Most bars also contain 5-10g of fat, 3-8g of protein and a few grams of fibre. Those macros are what make a bar feel like food rather than sugar, and they are also what slow gastric emptying — the rate at which the stomach releases contents into the small intestine. Fat and fibre both apply the brakes.

Where bars win: the first two or three hours of a long steady ride, when you have appetite, a moderate heart rate and the ability to chew without gasping. They stop the hollow, gnawing hunger that pure sugar never touches, and one bar can knock out 40g in a single stop.

Where bars lose: above roughly 80% of threshold, blood flow diverts away from the digestive tract and a fibrous bar can sit there for a long, uncomfortable while. They are also miserable to handle. Cold weather turns most bars into something you could true a wheel with, and unwrapping one in full-finger gloves at 25mph is a genuine skill.

Energy Gels: Fast, Concentrated and Water-Dependent

Gels are the most carbohydrate-dense option by weight, usually 22-30g in a 30-40ml sachet. They need no chewing, which matters when you are breathing hard, and they clear the stomach quickly. That is the case for gels and it is a strong one.

The catch is osmolality. A concentrated gel can measure several thousand mOsm/kg, far above the roughly 290 mOsm/kg of blood. To dilute that down to something absorbable, your body pulls water into the gut from circulation. Take a gel with 150-250ml of plain water and this is a non-event. Take three gels in twenty minutes with nothing but a mouthful of sports drink and you have effectively engineered your own GI distress.

Where gels win: the final hour of a race, sharp efforts, the bottom of a climb you know will hurt, and any moment when you cannot spare the jaw effort.

Where gels lose: palatability across a long day. Very few riders can face their sixth gel of a six-hour ride. Then there is the litter problem — torn sachet corners are the single most common piece of rubbish found on sportive routes, and increasingly a reason organisers hand out penalties.

Energy Chews: The Middle Ground

Chews sit deliberately between the two. A single piece usually carries 4-6g of carbohydrate, which is the whole point: you can dose in small increments rather than committing to 25g in one go. Eat two every fifteen minutes and you drip-feed roughly 40-50g per hour without ever presenting your stomach with a large concentrated bolus.

They also chew easily at tempo, they do not freeze solid, and they reseal in a jersey pocket without leaking. Most riders find the flavour fatigue arrives far later than it does with gels, because you are tasting something closer to a sweet than a sachet of syrup.

Where chews lose: they demand chewing, so at genuine full-gas intensity a gel is quicker. And if you are careless it is easy to lose count of how many you have eaten, which is why a rhythm — two per quarter hour, tied to a lap beep or a road sign — beats grazing.

  • Under 90 minutes: you likely need nothing beyond a bottle. If it is hard, a handful of chews or one gel late on will do.
  • 2-4 hour club run or sportive: a bar in the first half while appetite is intact, then chews for the rest, with a gel held back for the last serious climb.
  • Century ride or gran fondo: alternate. Real food and bars early, chews as the workhorse through the middle, gels only in the closing hour when chewing is unappealing.
  • Cold or wet conditions: chews and gels, almost exclusively. Bars go hard, wrappers get slippery and your dexterity is halved.
  • Racing: gels and chews. Anything requiring sustained chewing costs you attention you do not have.
